Honey-Ginger Salmon

Honey-Ginger Salmon is one of my favorite things to eat for lunch. It’s easy to do and the clean up is a breeze because the salmon is baked in foil packets! To makes things even better, the glaze that goes on the salmon is absolutely DELICIOUS! Not only is it good in this dish, but it is delightful on shrimp and chicken too. If you’re making this in the summer, try this out on the grill. The foil packets work perfect for grilling.

Honey-Ginger Salmon

Ingredients

  • ⅛ cup honey
  • 1-2 cloves garlic (depending on taste), minced
  • 1 tablespoons reduced sodium soy sauce
  • ½ tablespoon sesame oil
  • ½ tablespoon freshly grated ginger
  • ½ teaspoon Sriracha, optional
  • Freshly ground black pepper, to taste
  • ½ of a fresh lemon, juiced
  • 2 pieces of 8 ounce salmon filets
  • 2 green onions, thinly sliced for garnish

Directions

Preheat oven to 375 degrees F.

In a small bowl, whisk together honey, soy sauce, sesame oil, Sriracha, minced garlic, grated ginger, and fresh ground black pepper, to taste.

Place two sheets of foil on a baking sheet. The foil sheets should be large enough to completely wrap the salmon in loose packets.

Place each piece of salmon on the individual sheets of foil.

Spoon the honey-ginger mixture over the salmon then squeeze fresh lemon juice over the filets.

Fold the sides of the foil over the salmon, covering them completely and sealing the packet closed.

Place into oven and bake until cooked through, about 11-12 minutes for 1 inch thick filets.***

Serve immediately, garnished with green onions, if desired.

***NOTE: If you would like, you can cook the filets 10 minutes and then place it under the broiler for 1-2 minutes to caramelize the glaze.
